Backing up server for hurricane season

We're preparing for hurricane season. The servers (2) I'm working on can not be removed from the current location. So I'm looking for a solution to:

1. Backup/image the two servers.
2. Restore the image to a new server with different hardware (in case the hardware is 10 feet under water and can't purchase same hardware....worst case scenario).

Any information on this would be great! I'm trying to limit downtime and I'm thinking imaging the servers would be the best way.

Budget?

$699 - http://www.acronis.com/enterprise/products/ATISWin/

Acronis Universal Restore ? Restore to different hardware and recover from any unforeseen event (note: requires separate add-on license)

Boot from an image, using Acronis Snap Restore? (a patent pending technology) ? Decrease downtime by allowing systems to be used during a recovery

Create CDs with bootable images, and bootable recovery media ISOs ? Eliminate the need to have separate recovery media
