Backing up hard drives

Couple of quick questions.....

Can anyone tell me the best software for backing up my two 40 Gig HDD's that are Raid 0. Will software like 'DriveImage' or 'Ghost' copy info onto one 80 Gig HD and allow me to replace one (or both) of my Raid Drives and then put the info back on and resume normal operation? Thanx for any info on the subject!
