Backing up files

Other than backing up the obvious, (ie. My Documents, mp3's, photos, DVD's) what other files (OS or otherwise) should be backed up on a regular basis?

I read on a thread some guy moved his My Documents off of his OS partition. It got me thinking should I also include Documents and settings? Any advice is appreciated.
 
Documents and Settings includes import-able Outlook Express e-mail (I have imported inbox.dbx files tens of times), and lots of applications also put configuration stuff in Documents and Settings\Application Data. (Local Settings directory as well.)
 
Do you do a weekly back-up, or do you use a software program to schedule incremental back-ups?
 
Actually I was talking about restoring from past installs of Windows, but even on a regular basis it's a good idea to backup your e-mail if you do lots of transactions. Personally I don't backup on a regular basis, but I put some things I care about on an ftp and CD. I am not old enough to worry about tax sheets in Excel or anything like that. I mainly have games and downloads on my disks.
 
Since Acronis uses imaging, I assume you are backing up to another HDD. Does Acronis allow for individual files, or must you make an image of your total HDD? How much space does the imaging use, also?
