I'm getting a radar detector but since I live in NY I get taxed $20 for my order. Now I live in a university dorm and my address is pretty specific. During checkout do you guys think that I can click, oh, let's say.... New Jersey instead of New York for my state, type in the rest of my address correctly, and get the item successfully shipped to me while avoiding the tax in the process?

That is the dumbest thing I've ever heard...

NO, they don't even bother looking at the city or state....they always look at the ZIP CODE.
They based everything on the zipcode....so if you put in the right zipcode, taxes will show up.
Of course, you put in the wrong zipcode to avoid taxes, your package will end up in BFE.

Couldn't you order it as a gift(not sure if your site has that option)? Fill in info of some random out of state relative, & have the gift sent to your place.

I actually tried it with one website and it wasn't based on the zip code. Everything was correct except for the state which was New Jersey. The tax didn't show up.
