Most recent one I can think of was Robert Jordan with the Wheel of Time series. Brandon Sanderson was hired to complete the series from Jordan's notes. Probably a good thing, Jordan lost it about 4 books in (same time as GRRM, wonder if that's a coincidence?) and likely never could have finished it to anyones satisfaction.

Robert Jordan died before finishing The Wheel of Time series.

He did write notes about what was supposed to happen though, so the series was finished by another author.

Fantasy series that go beyond 3-4 books seem to go downhill in general, same thing happened with Steven Erickson's Malazan book of the fallen. Absolutely brilliant for the first few books, but almost unreadable by the time he got to book 8-10.

L. Ron Hubbard died after after only the first Mission Earth novel was published. All 10 still came out though.
