elfenix's take on the prawn mayonaise sandwich from sainsbury's:

3/4 pound of medium shrimp (weight with shells, but remove shells)
some olive oil
some butter
2 shallots
2 cloves of garlic
a bunch of basil
2 serrano peppers
bunch of baby watercress
4 or 6 slices of jamon serrano (you can use prosciutto if you can't find this)
chipotle mayonaise (chop peppers in food processor then whip into mayo, about half a can of peppers per small jar of mayo)
1 loaf of chiabatta bread

slice the garlic, basil, shallots, and peppers
melt some butter with some olive oil in a saute pan
saute the garlic, basil, shallots, and peppers
add the shrimp, cook until a bit translucent on each side (only takes a couple of minutes)
slice the chiabatta bread into sandwich sized pieces and grill with some olive oil and garlic rubbed into the faces (usually about 3 sandwiches can be made)
put some mayo on the lower side of the bread
put two slices of jamon serrano on each
add baby watercress
top with shrimp.

i like to serve with some rolling rock and kettle chips salt and black pepper
