Got any good recipes?

I'm currently looking for a good, easy, recipe for Chicken Breasts. I've never cooked them before so I'm making a few today.

They don't have to be amazingly complicated recipes, just good food.

Here's one to start.

[ : Egg and Cheese Sandwich : ]

2 Eggs
Black Pepper
Onion
Roll
Hot Sauce
American Cheese

I put a little butter on the bottom of the pan and then some thinly sliced and chopped onions. Not alot, but enough to cover pretty evenly. I let the onions sit until they just start to turn brown, and I queckly crack my two eggs into the pan. I personally don't like the onions when they begin to caramelize and cook too much on my eggs.

I keep the pan at medium low so the eggs cook pretty slow. I put black pepper to taste on the other side. Then when the bottoms cooked how I like it, I flip the eggs and turn the heat off, lightly cook the other side so they stay gooshy, throw them on a bun, and cover them with cheese. I put that into a conventional oven and toast the bun and melt the cheese. Take it out, hot sauce and bam, deliceous.

I also sometimes throw a little oregano in the pan, or cook bacon and put the eggs on the bun, the bacon, and the cheese on the bacon. But I personally don't like cooking the eggs in bacon grease, it seems to brown up the egg and toughin the outside.

I have a few more non-spectacular recipes that I'll share in a bit.

So, does anyone have any kitchen tricks? Or know how to cook a good easy chicken breast?

I think I'm gonna try marinating the chicken breast in hot sauce and garlic and making a sandwich with a toasted bun, lettuce and mayonaise.

It'll probably be disgusting.

As for the chicken breasts, here is a good recipe that is quick and tasty:

Take chicken breast and toss in skillet with a little butter, salt and pepper to taste. Get them 90% done, then add a generous helping of salsa to the pan ( I usually use a whole bottle with 3-4 breasts). Simmer for about 5-10 minutes. Add green onions, shredded cheese and serve with spanish rice.

Metal Mat's "Caught in a Mosh":

3 cans of red beans
bag of rice (small bag will do)
1/6th of a block of velvetta
Half a jar of salasa
Lots of Cayenne Pepper
Lots of Season Salt
Lots of Hot Sauce

Go ahead and cook your rice beforehand. Heat up the beans, then when they are nice and hot throw everything in. Drink alot of beer, listen to Anthrax, and enjoy

Metal Mat's "Catch of the Day"

1 Can of Tuna
1 Package of shrimp flavored Ramen Noodles
1 Egg
Soy Sauce

Cook the noodle, throw a cooked egg and a can of tuna after the noodles are done, then mix the shrimp flavoring and soy sauce. Listen to Black Sabbath and enjoy.

I also use Salsa in Spaghetti sauce.

That and oregano, garlic, and mushrooms.

It's tough to get absolutely right, the salsa / sauce ratio, but when you do, oh boy oh boy it's like some sort of secret pasta that should be internationally recognized for it's awesomeness.

There are many recipes at a search click away, but I have a few of my own creations if anyone care to have such as casserole, spaghetti meat ball, pho, tom yum, pad thai, chicken hot pot, bake salmon vermicelli/mushroom, stirfry, and my famous fried rice.

MetalMat, an easy Ramen dish is Chicken Flavored Ramen, cook, strain, and throw into a bowl with a slice of American Cheese.

Let the cheese melt all over the noodles, mix, and eat.

i am picking up some cornish game hens on the way home. what should i do? (i'll probably bake/roast them.) any tips? any kind of flavoring?

Radiators

Serves 4

1/4 flour
Black Pepper & Salt
1 lb chicken breast, skinless boneless, chunked - i use more then 1lb usually
olive oil\1/4 cup red wine vinegar
5 cloves garlic chopped
2 medium zucchini
1 red bell pepper
1 tomato cut into thin strips - use plumb
Dill weed, 1tsp or more to taste
3/4 tsp of oregano
2 TBS sour cream
8oz Radiatore Pasta - can use any kind of pasta that is curly and not flat as radatori is hard to find
Feta Cheese

Start pasta water ahead of time - cook it while cooking chicken
combine flour salt and pepper
toss chicken in mixture shake off
put several Tablespoons olive oil in pan, heat add chicken, cook till done, remove, set aside

Add garlic to pan with zucchini, pepper, stir cook till tender
sprinkle vinegar over the veggies
stir in tomato 1/2 cup of water dill weed oregano and pepper
bring to a boil on med heat, cook about 4 min
add chicken and cook till chicken is warmed up
remove from heat add sour cream

DONT OVERCOOK PASTA
drain pasta stir into chicken and veggies

Sprinkle with Feta
Serve

marinate them in a soy sauce with brown sugar for 4 days.

grill on 5th day. Trust me, there is no harm in the 4-day marinade.

made this these this morning, sooooooo good.

protein pancakes
1/2 cup oats
1/2 cup cottage cheese
4 egg whites, 1 egg with yolk
cinnamon, vanilla, splenda (to taste)

mix it all up and cook it like a pancake. I cut the recipe in half and used only 1 egg white and 1 egg. I didn't use the splenda but I did have some sugar-free maple syrup with it. sooooo good.

you can also try adding more protien with protein powder or flavour them with berries and bananas.

spicy thai peanut chicken

1 ½ lb boneless, skinless chicken breast, cut into chunks
1 medium red bell pepper, cut into strips
3 tbs natural chunky peanut butter
1 tsp Thai-style red curry paste
1 tbs chopped green onion


Spray wok or non stick frying pan with cooking spray or several squirts of lime juice. Saute the chicken and red pepper until chicken is cooked through. Add peanut butter, Thai curry paste and small amount of water to reach desired consistency. Cook until hot, stir in green onions and serve.

3 strips of bacon
3 slices of tomato
2 pieces of lettuce
2 slices of potato bread
1 avocado
mayonnaise
salt

cook up the bacon over medium/medium-high heat. in the meantime, start slicing up the tomato and picking off and washing the pieces of lettuce. put the potato bread in the toaster and let the bread get lightly toasted on both sides. slice up about 3 slivers of avocado (or chunks, depending on your fondness of avocado). when the toast is ready, lightly smear mayonnaise on both sides and then stack the lettuce and tomatoes on one side, and on the other side smear the avocado and add salt, and then lay the bacon down on the same side of the avocado. close up the sandwich and enjoy!

never heard of putting avacodo on a blt...sounds pretty good though.

Those are home made concoctions/variations that I developed over the years.

I can have tom yum from scratch, fried rice, stir fry, casserole, banana bread, salad, all ready in about an hour.

Almost for got my fried halibut/red snapper tomato sauce creation.

Quick and easy garlic bread, loaf of bread slice in angle at 2-3X thicker than store slice and cook in a pan with lid on to keep the moisture in (the best evar)
1. Bead slices
2. Fresh garlic and salted butter
3. Cook in pan at medium heat with lid and flip bread in about 30-60 second for each side.

i tried it for the first time a few years back and now refuse to eat a b.l.t. without avocado. in my opinion, it completes the b.l.t. a perfect compliment to it if i may say so myself.

Want to never eat Mac and Cheese the same way again?

Cook regular mac and cheese.
Heat up some chili.
Boil 4 hot dogs.

Cut up the four hotdogs, and put it in with the chili. Mix. Now take the chili and dogs, and dump those into the mac and cheese and mix.

It's a life changing dish.

Pending your liking, but you can roast, bbq, or my favorite half in frying pan.

Marinate for 15-60 minutes
1. Olive oil
2. Basil (fresh if you can get it)
3. Garlic
4. Lemon grass fresh crush/grind
5. Salt/pepper
6. Soy sauce
Frying pan, medium heat, little or no oil, cover with lid, cook till ready. Serve with white rice/fried rice/garlic bread/potatos, and steam veggies or salad.

ingredients
- extra lean ground beef or your choice of leanness
- eggs (2 eggs for each pound of beef)
- onion flakes
- Montreal steak spice
- garlic salt
- vegetable or wheat crackers, crushed up
- Worchestershire sauce (optional)
- Frank's RedHot (optional)

directions
- add contents into bowl. mix with bare hands
- create patties - use own judgement for size. note: they will shrink slightly when grilled
- grill instantly or freeze for later grilling

you can use varying amounts of spices to get the right combination of flavour. generally, a few tablespoons of each will suffice for a 1-lb. mixture. they cook nicely over low to medium heat. these burgers will remain very juicy if you cook them just right. serve with garden salad for a nice cool summer combo! :cool:

You counldn't cook a mushroom that I wouldn't like. I used to stuff bell peppers with the big portobello muchrooms, sliced sirloin, rice, and whatever else stood still long enough.


Man, I need to go to the grocery store after work. :(
