Athlon MP 2800 x 2

I am going to be building a new system for running Half-Life dedicated server and a few other server apps. Would 2 MP 2800s and a gig of ram be sufficient or should I go with a single proc system?

How fast are the dual systems in comparison to the single proc systems? I can't afford to build an Opteron system.

dual proc systems arent that much faster unless you are running programs that can support SMP (half-life does not, im pretty sure)/ you'll want to go with a single proc system - you'll save lots of money.

That is more than enough power for an HL server. My friend and i run a Cstrike server on a P3 800mhz w/ 256MB RAM under Redhat 9.0. The only thing dual CPUs would be good for are, if you are doing a lot of multitasking while the server is running, or if you wanted to run multiple game servers. If you need help getting your server up and running let me know, i may be able to help.
