Ate crawfish for the first time this season last night

I love this time of year! Had crawfish last night with the family. Really, really good, but I can't wait till the prices go down and the sizes go up. :beer:

Can't wait, it's gonna be a good season! My mom brought me my first king cake of the year yesterday...its almost gone. :D

I moved to Florida a couple years ago. MAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAANNNNNNNNNNNNNNNNNNNNNNNNN I miss being able to easly get crawfish. And hopefully a king cake will be shipped to me shortly. :)

cool! we'll have our company crawfish boil in another month.

king cakes are in the office every day it seems.. good times. also received the email the other day letting us know the office will be closed for Mardi Gras :D

Heading back to New Orleans Memorial Day weekend and can't wait to visit the Acme for crawfish again. I tried a few different places but there is just something about the seasoning they use that makes them awesome.

I'm missing out on Mardi Gras this year, making a trip to Ireland that I can barely afford instead. I made it to 3 straight Mardi Gras while a friend went to school, 03-05 and want to get back to making it a regular trip but i'm back in school now. Unfotunately one of my favorite hole in the wall restaurants, Dunbar's, didn't reopen after Katrina.

Any home recipe? I'm not sure what quality of crawfish I would find in Ky, but I would'nt mind trying a boil.

A turkey fryer is way too small. An 80 quart stock pot is better.
Only fill pot halfway with water. The crawfish will displace much of the water.
I prefer to add the potatoes a little before the crawfish because they take longer to cook.
Do not add corn until crawfish are done cooking and you are beginning soak phase for opposite reason of potatoes.

First you pull the tail away from the body.
Peel away a couple of the shell segments from the tail.
Pull out the tail meat and eat.
If claws are big enough you eat them too.

I don't know the name of the place, but I can find out if you're interested. My friends(Tulane Students) would make a trip to a grocery store in the "ghetto" , that usually sold out it's daily crawfish output pretty fast and would bring back a few coolers full.

Any tips on where to get crawfish outside of NO? Online where? Or just my local grocery store, I know I used to catch them in streams up here, but where will I find a good price/quality?

The problem I have with eating crawfish is that it takes a lot of effort for a very small amount of food. My fingers usually give out before I get full.

I had some before Christmas. I was surprised at the size for that early in the season. So far, the season has been excellent. Getting a little scarce though because so many people have started buying them earlier. The population isn't quite there yet.

But man I can't wait for my next boil

With practice you get better at peeling.
