Can someone please explain the difference between ATA133/100/66/33. Can I use a Maxtor ATA 133 drive on an ABIT motherboard that has ATA 100? Are the cables the same?

Yes you can use a ATA133 drive on a ATA100 interface (you may not be able to format it as a single huge partition though). You won't see any performance degradation as current drives don't even push the ATA66 evelope (best current drive according to SR.com only pushes ~48MB/Sec max, ~38 Average Sustained [barely above ATA33]).

And yes, the ata66, 100 and 133 ide cables are the same. They are 80 conductors, with 40 pin connectors. Ata33 cables use just 40 conductors.

The new Abit's bios supports up to 137 gigs, so you can make 1 partition if you want.
