AT Foodies I need help!

First no judgments please.
My fiance has joined the big brothers/sisters. Tonight her sister will be by for dinner, she's 11 or 12 years old. I was told she likes food that's a little bland with some exceptions. I have some chicken to grill with some basic BBQ sauce, I can handle that but I hate the thigh meat and don't have experience grilling that part, how do I know when its cooked enough on the grill?

Meat thermometer. Safe instant temp is about 160 for dark meat. But its okay to pull it off at 150 or so because of carry over cooking and the fact that the process to bring it up to temp kills off most things.

Knife in the meat, look for pink meat or read juice. If the juice is clear, and no pink meat. Then it is done.

Honestly no... everything else are just estimates that are very often wrong. Chicken can be done when the meat is still both pink and the juices are not clear. It can also not be done when the juices are clear as well.

OP: You can usually grill chicken thighs at high temp for about 15 minute (flip for even time), then either move to cooler part of grill or rack, or just wrap tightly in heavy foil for 10+ minutes or until ready to serve.

You can cook them up to 20 minutes without too much concern. Pink is OK with chicken to a certain degree. You don't want it red, though.

Hard to describe the texture--you don't want it to be soft or rubbery and you don't want it to be completely firm. You want it firm and soft--some resistance but not too much.

if she likes it bland she probably likes it well done too, so just cook it until it's twice as dead.

When I was a kid I remember loving well-done, very lean everything, and my siblings were much the same. I'd cut the fat off of even the best-trimmed shoe-leathery piece of meat.

Seriously, they aren't expensive and you'll have peace of mind not poisoning your wife's little sister. I use mine all the time.

I also have to point out that having to tell you this is a good tool to have calls your user name into question. ;)

Forget grilled meat. Buy Kraft Macaroni and Cheese, and make some chocolate cupcakes.

Very few 12 year olds are foodies, and why make her hate her Big Sister, when for .99 you will make them best friends for life!

To me, chicken thighs are the easiest part. Overcook a breast and you have a nearly inedible dry piece of shredded shoe leather. A thigh is really hard to overcook. Even if you go way past the ideal temperature, it will still be quite juicy and tasty.

Absent a thermometer, just cut open the thigh. If it is slightly pink you are probably perfect. But, to be extra sure, if you are uncertain about thigh meat, just cook it another minute or so as it is quite tolerant of being overcooked.



Real foodies would hate this, but you can also grill the thighs, cut them into slices, salt/pepper/garlic powder the slices, and then pan fry it for a minute in a hot cast iron pan (being sure to put the inner less cooked sides on the pan and flip once). Do that and you'll likely never want a chicken breast again. And you have almost no worries about temperature.

This was my first plan but I got shot down. We suspect nutrition is lacking at home.

I did this without wrapping too thoroughly. Looked pretty good no pink but not dry. Thanks this was a good tip.
I'm glad I picked up the legs she wanted nothing to do with the white meat. I did strike out with the potato salad she didn't like that. She did enjoy the roasted brussel sprouts (this wasn't a guess) and good enough with the fresh corn.

Boil it for 30 or 40 minutes. Put on high heat grill to crisp the skin. Serve and thank me later.

My Mother has done that for big cookouts. Boil the chicken until mostly cooked, finish on the grill. While its not the greatest chicken its good enough and less clean up, less germs.

you have to pick the meat up in pieces as it slides off into the pot of boiling water to transfer it to the grill, but other than that :thumbsup:


no salt? no seasonings? what the fuck is wrong with you people.

I've seen people microwave chicken partially before throwing it on the grill. I think a lot of people just don't know how to use a grill, and how to cook thing properly using a hot and a warm side.
