Asus P7P55D... settings for stock i7 860

Do I need to set values for voltages, memory, CPU, etc by hand or will the default "auto" settings leave evrything at proper values?

What memory are you using? If it is faster than 1333 it will likely be set to 1333 by default. It will still run. But maybe not at the settings you are expecting.

G.Skill 1.5v 1333. It is running at 1333, but the timing are 9-9-9 instead of 7-7-7. I huess I will need to manually set them.

If you change any settings be sure to test your Turbo functionality after the fact. I discovered the Turbo would be disabled on my GA-P55M-UD2 if I changed some RAM settings (e.g. turned on XMP). It might have only been when I bumped up the memory multiplier so it would run at 1600, but I didn't test tightening timings so it's possible that would have the same impact.

I tested by checking the multiplier in CPU-Z at idle, and then when running one single thread of Prime95. When Turbo was working I got x9 at idle, and with one thread it jumped up to x26. When Turbo accidentally got turned off it sat at x21 or x22 all the time.

Some simple BIOS changes (from Auto to Enabled) allowed me to keep Turbo on with modified RAM settings. Of course your BIOS will be different, but you can see my discussion about this and the BIOS settings I changed to allow Turbo to work in the following thread (BIOS changes in the second comment):
