ASUS P7P55D-E Pro AI Tuner in the Bios

Noobie question. I posted this in Motherboards as well because I was hoping someone with my board would read it. Could anybody give me a little advice on this section of the bios for this board? Though I don't want to overclock I set the AI overclock Tuner for XMP as recommended by the tech at G.Skill as this memory is Intel XMP ready. He said this would optimize the memory performance but not over clock it. Further down the list of Bios options is something called OC Tuner. The manual says the default is [Good Performance]. The settings are Good Perf, Better Perf. and Turbo Profile. I didn't change this setting but it was set to Turbo Profile not Good Performance as stated in the manual. I even loaded the defaults to make sure Turbo profile was the default and it was. I have left the bios at these settings and the system seems to be running fine. The manual says to set to Good perf or Better Perf as a stable setting for daily use and choose Turbo Profile as an advanced overclocking setting for special purposes. I haven't loaded much on this machine yet but it seems to be running stable. Should I set this to Better performance or should I leave it until I experience stability issues?

One more thing. How can I tell what the CPU and memory are running at with CPU-Z? Or is there a better way to monitor this after each bios setting?
