Asian cooks, need help making fried rice

so what's your recipe?
I have a pretty bland one, it needs improvement:

- chopped onions
- some garlic
- a bit of soy sauce
- frozen carrots/peas
- chicken sliced
- 1 egg
- rice

You could add shrimp. Sometimes I'll use a little bit of the Chinese five spice. Not too much though, dont need flavor overkill.

Add whatever meat and veggies you want, but here's the best way to get good fried rice:

- Rice, preferably cold or frozen.
- Soy sauce to taste
- Spices, to taste. I use black pepper.
- White sugar to taste (Maybe 1 tsp per serving)

You can add onion, that usually works. Garlic, five spice, etc. all is optional but the above is the best simple way to get good fried rice.


If you want to get fancy and get a GREAT texture to your rice:

- Put fresh steamed rice in a bowl
- Add egg, some flour, salt, sugar until you have a moist mixture (should not be runny or you have too much egg)
- Fry until golden brown. Mmm.

is it true that in china fried rice is what they do with old rice in order not to throw it away..thats what my chinese coworker said

They use old rice because it's more dry, or so I thought.

don't forget some green onions diced... and some oil to cook it in. Vegetable oil will be fine.

Extremely hot, well seasoned wok helps. Just doesnt taste the same when cooked in a pan. Try using fish sauce, it sure stinks, but makes food taste better.

yea the real way is to just throw in your leftover rice, leftover dishes, add some "lao cho" (dark soysauce), some scamble eggs, and fry. sure as hell beats restaurant fried rice :)

oyster sauce is a must. otherwise use NO soy sauce and no oyster sauce, only salt to season. Eat with ketchup.

great I'm going try some of these suggestions tonight. I forgot all about the green onion, I think that's what is missing. Oyster sauce with fried rice? I use it for stirfry but I'll try it as well.

I like to put in:

chopped up chives (definitely not onions)
ground meat (pork or beef is good) OR chopped up sandwich meat (the processed stuff like Foster Farms)
shrimp
salt or soysauce, but not both

I don't like carrots or peas in my fried rice.

here's how we do it (viet family)

day old rice (put in fridge obviously)
soy sauce
shrimp
egg

beat the egg in a bowl like you would for an omelette, throw it on the pan, when it's done slice it up; cook the shrimp; then throw all the stuff in a pan and fry

you can use ketchup too if you like it that way (i don't)

You can buy chinese barbeque pork and dice them up.
Shrimp, hotdog also work.
Ground beef with lettuce is also a recipe if you put plenty of oil into the fried rice.
A fancy way of doing fried rice is with egg white,scallops, shrimps.
Mix egg white with milk (1:1 ratio),a lot of corn starch (2~3 tablespoons), some chicken seasoning also.
Fry only the rice, and use chicken broth to put some flavor to the rice. Put the rice aside.
Fry the shrimps and bay scallops, then add more oil and put the Egg white milk mixture in.
Stir them until the mixture becomes solid, then throw the rice back in, stir well.

A good tip if you want to make it healthier... bake the rice instead of frying it. It takes just as good but you use less oil and it has less cholesterol. My wife and I have been doing that for awhile and people always compliment us at our parties.

poormans fried rice, or quick fried rice: just put some soy sauce on rice, bam! fried rice! =)

But umm..I cook fried rice by first frying the egg and the chinese sausage (seperately), then I add a lil oil to the pan, and fry the rice on like medium-low. I then season with soysauce to taste (and color), add some fish sauce (not a lot of fish sauce) and add the frozen veggies, and then add the egg and meat, then fry a bit more. If your fried rice is bland try adding a bit of fish sauce, like maybe a 3 teaspoons, depending on how much you are making. Fish sauce is availble at any oriental or asian supermarket. I usually buy the one with the squid or shrimp on the label. Also, if it become too salty from say too much soy sauce, try using a light soy sauce next time.

If i remember what my mother told me, there are two kinds of fried rice, the dark kind (with soy sauce as the color) and the white (no soy sauce) kind. I like both. My mom like the salted fish fried rice from the restaraunts, I've grown on the taste. But, I don't like fried rice that is really loose, like its not somewhat sticky, as if the rice was dry or whatnot.

little sugar
egg beaten
day old rice
VERY hot wok

There u go, YangChow(yeong chow chau fun) fried rice.
(skip the chicken please...) <--only exception is if the chicken is precooked with taste.
