For the most part, the iPod works fine, but certain tracks it likes to cut off at weird places. I'll take one for example: it's about 13 minutes long, and every time around the 8 minute mark, it stops playing and goes back to the main menu. I wipe the whole iPod and try loading it all on again, it still cuts off at around 7:45-8 minutes. Yes, the track plays fine in iTunes.

Any idea what's causing this?

That, or the MP3 is slightly corrupted, so that iTunes will still play it but the iPod will not, try to fast forward past that point (to like 9mins in) and if it continues to play, its probly a corrupt file, otherwise its prolly a HDD issue.

Though, if you reloaded music many times, it should show up on different songs everytime, because i can't imagine that the same song ended up in the EXACT same spot everytime you recopied your music.

yup, corrupted file. You may not notice a slight glitch when played with iTunes, but there probably is one there.

MAYBE, a fscked up drive, but usually you will get the busted drive icon on teh iPod screen if thats the case...just re-encode the file in iTuens and you should be on ur way
