Are those hand vegetable choppers any good?

Never found a good one.

If you want to try one, check the thrift shops. The going rate here is 50 cents.

If you mean the ones that they show on teevee with the blades that move every time you push the plunger down... no they do not...

What comes out are pieces that are incredible UNuniform in size.

Get a good chef's knife and learn how to use it and you will never have need for any of those gadgets. I agree about thrift stores, the ones that sold a lot will show up there.

I use one of those... but only for turning everything into tiny things (mincing garlic and onions)

...no. sorry, but even master chefs can't julienne 50 carrots as fast as an amateur can rip through them with a mandoline.
