Are there any devices that will interface a telephone with a computer? (Read, it will make more sense inside).

For instance:

Say I want to conduct a multiple choice telephone survey. The answers to the survey are to be entered numerically from the telephone keypad. I would need a device that could monitor the survey and interpret the DTMF (Dual Tone Multiple Frequency) tones from the numeric entries on the other end of the phone. This device would also need to interface with a computer for logging the responses in order to process the results of the survey later.

I know there is something like that out there; I just don't know what it's called.
How else would the automatic telephone operators work?

Seriously, a typical modem should be able to do what you ask with the right software behind it.
