Are the majority of Android users that are experiencing crashing/lag and whatnot

If at the end of the day I'm going to replace TouchWiz/Sense crap with better things on the Play Store anyway, why should I care that TouchWiz has a few better crap apps than stock along with many other useless bloatware gimmicks that do nothing except bog down the system?

To be fair, not everyone wants/has the time to try out a variety of apps from the play store. For those people, an OEM build offers a wide range of functionality out of the box that's well integrated.

I use the default Android experience on a Google phone (Samsung Galaxy Nexus). I do that not so much because I don't like the extra features or capabilities of the integrators but because I get access to the core OS updates immediately. Google announces an update and I get it within a few weeks and I know I'll keep getting updates until my phone is genuinely too slow to take the update. Being a developer writing an android app I also find staying as close to stock as possible is a good way to reduce the potential for problems in development when comparing the emulator to the actual hardware.

I don't personally customise the interface I use for selecting apps or really change away from the default apps all that much. While I don't necessarily think the apps are all that good by default they are usable enough that I don't mind them. I used to customise the Windows interface a lot, for years I used to change it and install custom software. But I reinstalled often enough that in the end I just stopped changing it and didn't really loose much. Android is the same, in the beginning I messed about with it quite a lot and looked for cooler looking interfaces and potentially more productive ones but in the end I found the gains in productivity were marginal. So now I go with what I get for the most part when it comes to the OS and Applications and everything else. I try to minimise the customisations I make to my software now because the upgrade process from generation of software to the next is quite high maintenance.

They are basically forcing us to use it when we buy their device. I don't know why they can't give their consumers options.

I can't see anything wrong with letting consumers choose whether to use touchwiz or stock Android. If someone prefer to use Touchwiz then they could just not change anything when they get the phone out of the box, and if someone wants to use stock android then make it easy on them and give the option to change a setting and boom!

Stock android.

For all the phones I've seen, slowdowns, not to mention bad battery life, are being caused by Android's awful management of running processes. Too much background crap running amok.

Stock android.

I dual boot GPe and Sense 5. Hit the switch widget on my phone, it reboots, and I'm in essentially stock Android. Press it again and I'm in Sense 5. Shared apps. Best of both worlds in my opinion as there are some good features in Sense on the One. Virtually no performance hit.

I can complain alot about Android's shortcomings but amazingly I have not had the experience OS crashing on me yet. I do however see frozen phones/tablets frequently at Bestbuys et al. I even saw an iPhone 5S frozen at a local AT&T store.

App crashes, however, I observe not so infrequently on my Android devices.

Stock android.

Because they want to make money, and by having their own overlay they make their customers get used to their interface, so the next time Joe Average goes to upgrade his phone, he'll likely gravitate towards the interface he's more familiar with.

Calendar: I'm replacing TouchWiz/Stock crap calendar with something else on the market.
File Manager: There are much better apps on the Play Store for that than the crap that TouchWiz provides.
Backup: There are much better apps on the Play Store than the crap that TouchWiz and Sense provides. Titanium Backup and Helium?...You've never heard of those?
Google Music: I prefer Apollo(my favorite), and PowerAmp than the built in app that Sense or TouchWiz provides.

If the only reason you pick TouchWiz over stock is because Calendar, File Manager, Backup, and Music player are better than stock, then you must not venture out much into the Play Store. There are lots of apps on the Play Store that are much better than the built-in examples you've cited as what Samsung and HTC provides over stock.

I use:

Calender: DigiCal+ + Tasker to do auto silence on events & Night time
File Manager: ES File Explorer
Backup - Titanium Backup and/or ROM Toolbox Pro
Music: PowerAmp, Slacker, Pandora, gMusicFS w/ PowerAmp

I'm running Carbon Rom which is based on CM10.2 with touchwiz theme so it looks just like stock. lol Touchwiz, while looking good, is too lathargic for my use.
