The sniff test has never failed me. Your chances are better if it was cured in any way.

if you bought them in a sealed package and it wasnt opened, should be fine.

if it was fresh cut deli meat or if you opened the seal on the prepackaged kind, i would throw it away.

usually you can tell its bad when its got that slime/film on it

I wouldn't eat them ... its not worth the chance of getting sick & puking all day/night for a lousy sammich.

I've had hard salami last for three months but this is unique among deli meats. The slime/smell test has served me well - never have had food poisoning. Roast beef will sometimes get a green tint.

And everybody should know that any bad/old spots on cheeses can be trimmed off.

I think that allowing deli meats and cheeses to get to room temp while eating shortens their life expectancy. I use them and return the remainder to the frig.

In general, people waste a lot of food being hyper-sensitive about this. Trust your eyes and your nose - not the date on the package - it could be longer or shorter.

I do the smell test. Meat will smell odd if it's beginning to spoil. If it doesn't feel "slimy" and there's still a fresh smell, go nuts.

Also, smoked meats (ham, turkey, pistrami, etc) will last longer than other meats.

Deli meat that I buy has a date right on it that usually goes out a week or so.

But go by the feel/smell test.

What doesn't kill you makes you stronger.

Most people would throw away a good aged steak. It will smell like crap - but taste like heaven.

Had a close friend that was an old German Chef. He talked about cutting the beard (mold) off of meat. . .
