With reference to this picture Apple Software Update,

is it possible for me to have iTunes and QuickTime update SEPARATELY listed?

I don't have iTunes installed. In order to use this update program, it seems I have to also install iTunes as well (which I don't need). I can always go to apple.com and download QuickTime by itself, but this shouldn't be needed (that's what this Software Update is for).

EDIT:
I just double-checked my currently installed version of QuickTime, and it's already the latest at v7.4.1. Not sure why Software Update popped up then???
 
Unfortunately they are a package deal nowadays unless you find the place to get only the one you want...

If you only use Quicktime, consider Quicktime Alternative or just turn off the updates, because I can't think at this point why you'd need to update QT frequently.

Apple Software Update annoys me as well. The other day I was prompted to install/update Safari for Windows, which isn't even installed on my machine.
 
There is a lot of people upset over apple trying to trick people into downloading safari for windows. I think they could have handled it better. At least leave the box unchecked by default
