Anyway to purposely slow down my 4g lte or 5g ?

We have unlimited high speed data phone plans so it never slows down so how would I slow it down to different speeds? I want to test something

You could try putting your phone in the microwave (don't actually microwave it lol). If it actually cuts off the signal you can probably experiment with having the door slightly open. This is kinda crude and not really controlled though. Fridge might work too.

You'd probably have to root your phone. Other option is to use it as a Hotspot and then use a computer with an app that allows you to throttle the wifi.

No idea what your idea is though or why you want to do this...

Red Squirrel is on the right path, but what you really need to do is put the phone in, run the microwave for about 10 seconds, and then test it. That will slow down the 5g temporarily to 4g speeds.

I've found that a hammer applied liberally slows data speeds very effectively! ;)

This wouldn't tell you much about the impact of IRL data-speeds directly on your phone at all though.

If it's an Apple, you need to nuke longer than 10 seconds and use water...
"Place the apples into a microwave-safe dish (I like to use a pie plate), pour the water into the dish, and then cover it with plastic wrap, leaving a small gap to allow some of the steam to escape.

Microwave on full power for 5 – 6 minutes, or until they are fragrant and soft."

On more serious note, you could try dropping to a different network type the phone settings. Under "network and internet" then "sims" there's a "preferred network type" option. On mine I have 5G, LTE and 3G as options. LTE is 4G I believe. I'm on CalyxOS so not sure if it's different in stock android but it should be similar. No idea how to do it with Apple.
