Anything that will record a stream of audio directly to mp3?

Need something for business meetings where I'll be hooking up a mic to my laptop and creating mp3's to send to clients. Is there any simple software that will let me hit a record button, record the audio stream to disk as an Mp3, without any conversion, and catalog it in a logical manner? I'll pay for it if it's good.
