Anyone like cappuccinos?

Just curious why you like all that foam?

(and you're paying extra for that foam too.)

Cappuccino == a drink of thirds; one-third espresso, one-third milk, one-third frothed milk. The frothed milk shouldn't be foam, either; you're not supposed to get the dishwasher soap looking milk that you get at most places. It also shouldn't be any more than 6 ounces unless you're making it with a triple shot, but that's a little carried away. I make my cappuccinos with what's called a ristretto, and that's only ~1-1.5oz of espresso.

Why do I like it? Too much milk hides the flavor of the espresso. A proper cappuccino is well-balanced, and it lets the qualities of the espresso shine through.

But the frothed milk only lasts a couple of min. then it separates... milk on the bottom, foam rises to the top.

I've always liked cappuccinos-when my xwife was a barista I had her put one squirt of vanilla flavor in the milk before she steamed it (I was the coffee roaster)-it was perfect!

Besides an americano there isn't a drink that let's you taste the well roasted flavor of the coffee.

Properly poured, that doesn't occur. Watch any quality barista and you'll find the pour is one smooth motion, and the milk comes out of the pitcher precisely the way it should be in the cup.
