anyone know of a way to tell 16x8m ram from 32x4m ?

Number of chips. I believe 16x8 is 8 chip and 32x4 is 16 chip (8 on each side.) Sorry about sounding vague. It's been about 3 years since I cared about the difference (because motherboards USED TO require one over the other.)
 
labels help if your lucky, but not all have the density marked 🙁
chips dont help, a lot of times the chip count is the same, but when they do make a difference its the other way around 8 chips = 32x4 and 16 = 16x8

I was hoping there might be a soft that will know

Wrong, 32x4 or 16x8 is not about the number of chips, it's about the chip's internal architecture.
You can only know from looking at the chip's part number and check the manufacturer's datasheet.
A 256MB double side module has 16 chips (8 on each side) no matter the chips are 32x4 or 16x8.

I said when it makes a difference, its not a golden rule, but many times lower chip count does mean a higher density.
example the 256mb module, have you seen many low density single sided 256s ?
but yes you can find double sided high and low density
