We use MailEnable, which can be found at download.com. It's actually pretty powerful for a free server and even comes with a POP server, where you can setup your own domains and mailboxes.

same with 602. It also has a print server, fax server, routing features, a relitively large following, etc.

If you can go to W2K3, it has SMTP built in.... and POP, too! (But yeah, it's IIS probably.)
