Anyone know if there is a way that I can use my xbox communicator headset with my PS2 console?

For what? The headset is a standard mic + earpiece combo with a 1/8" plug on the end. The communicator piece that plugs into the controller obviously won't work.

Is there a usb adapter for the 1/8 plug?

I don't know but I've never heard of one. There might be one - try Google. Something like USB adapter stereo plug or something
