You know when u go to a vietnamese restaurant...and u order something crunchy(fried) like spring rolls or something...they give u this watery semi sweet/salty/sour light orange colored sauce to dip the stuff in...how do u make it?

NO GUESSES!...i want real recipe..anyone knows for real?

fish sauce rocks

and the best is with no hot water

use a generous amount of lime and sugar

you can also had finely chopped garlic or carror strips (cut very thinly) and instead of chili paste just add red peppers chopped finely if you want to kick

i love that sauce so much 🙂

you need a lot of fish sauce and a lot of sugar though you have to taste it to make sure you get it right

it should be sweet enough so that you should be able to dump a whole lot on whatever you are eating and not have it taste extremely salty unlike normal fish sauce which is very salty
 
It depends on how you like your sauce and depends on what you are eating. Certain foods you have to make it more sweet than other foods. But the basic ingridents are sugar, lime, fish sauce, water, and either fresh red peppers or hot chili sauce. You want to put the sugar and lime in first. Then put fish sauce and then the water. The amount of water will vary depending on taste and amount of fish sauce and sugar you put in.
 
ok..this what i'm gonna do. i already got fishsauce so all i need is lime.
regular limes from safeway will do right?..coz its gonna be a pain to find those small asian limes.
also, i think i'll just use the ready limejuice from supermarket.

1) add lime juice and sugar.
...mix until sugar kinda melted.
2) add fish sauce.
...mix.
3) add warm water.
...mix and taste.
4) small amt of chili sauce.

i mostly wanna use it for fried chicken wings, springrolls...
 
for a 1/4-1/3 cup of lime/lemon juice to 3/4-2/3 cup of water I add about 3-5 tablespoons of fish sauce to the mix. Maybe less. I dont like adding too much fish sauce because that stuff sticks to your lips and you can still taste it three days later. But usually i have my mom or grandma make it. You can also make it with vinegar; vinegar will last longer than the lemon/lime version.

EDIT: The sauce is called Nuoc Cham.

cool thanks. i'll just use lime coz i'll prolly make it fresh each time.

Buy some from the place where you ate it before. Go home put it in the fridge. and VIOLA it's ready when you need it.

maybe because it tastes better fresh
and it takes a minute to make


why not eat out all the time and never make anything its so much easier

Portions generally to me mean 5 squirts of fish sauce, 1 slice of lemon (about a sixth of it total), 1 tablespoon of sugar, and however much water till it tastes right and add whatever is needed.

Yes, very finely sliced carrots, and finely diced garlic can be added. My family prefers you to roughly chop it, then mush it down with a pestle and mortar, as we think the garlic taste is better that way. We add a bit of that red chili paste in the general bottle so the little kiddies can eat too. The grownups crush in their peppers for more spicyness as they get their own portions.

Sorry, but I'm viet, so I just do it from experience and taste.
