Anyone know how to make chinese chicken and broccoli?

Whenever i make chicken, it always comes out too tough and dry (i guess that's what happens when you only use the george forman grill, heh). The chicken + broccoli meal i sometimes get from this chinese restaurant is always soft, tender, and extremely juicy. Anyone know of any recipes to make it?

just marinate the chicken more and broil it in an oven or on a pan and make sure it's covered, so the juices don't escape. Don't turn the heat up too high (that will cook the chicken too fast, not allowing the juices to soak up)

I've grilled chicken on the Foreman grill before, and it hasn't ever really gotten too tough and dry. Are you just cooking it too long?

We use George Foreman all the time and our chicken comes out great; sofy, tender and juicy! Just don't cook it from being frozen...then you get rubber. Or don't cook the bejesus out of it. :)

I wish I knew the answer to you question though...that sounds really good right now!

oh, didn't read your whole post there. just read the part about the chicken.

well first you could make your own sauce using teriyaki sauce and adding a bit of sugar and thickening agents for the sauce. Then rinse and boil some brocolli and add it into the sauce and cooked meat, and voila! you have a big mess with lots of pots and teriyaki chicken with broccoli (brocolli.? sp?) from which you could have bought it for about $2 at your local chinese fast food joint.

that's why it's a lot easier taking out than cooking at home. If you REALLY wanted to cook it though, there you go. (i'm not sure on the sauce, you might wanna check elsewhere, i cooked at an american restaurant but my mom cooks that stuff sometimes)

another suggestion would be to buy that stuff at costco with the sauce packets and the cooked frozen vegetables.

Heat is your friend and the secret to chinese cooking...
i use a gas wok..extremely hot...wok oil is steaming like
boiling water then dump the marinated chicken in and toss
them a bit...it'll char lightly but cook fast and it won't dry out.

u can tell how good a chinese restaurant is by their "wok-hei"(cantonese for "wok-breath")
a super hot wok is essential...in fact it is an underhot wok that will
turn your meats chewy, gummy...tough.

Hints:

- Cut the chicken into small pieces, marinate in rice vinegar, ginger, and soy sauce for about 20 minutes
- Heat oil in a wok at HIGH heat, saute some chopped garlic for about 30 seconds. Add chicken.
- Saute chicken until done (smaller pieces take less time). Note that high heat will sear the marinated chicken keeping it moist.
- Set chicken aside, add ~1 tbsp oil to pan if necessary
- Add broccoli to pan, while it's cooking, get a lid (slightly smaller than top of wok works best). Add 2 tbsp water around the edges. Do not remove the pan during the intense sizzling This will quick-steam the broccoli, making it crisp and colorful.
- Add the cooked chicken. Turn heat to medium.

On the side, add 1 tbsp of cornstarch to 1/2c of COLD water. Mix.
Slowly add mixture to the chicken and broccoli, bring to boil. THe sauce will thicken. WHen it has reached its desired consistency, add 2tbsp hoisin sauce and 1tbsp oyster sauce, or any combination of the two to taste.

That will get you fairly authentic beef or chicken with broccoli.

Some that post here would promote the theory that given enought tyme[sic], chinese would mutate to both chicken and broccoli. They call it evolution!

i think uc an buy different chicken at the market. some are tougher and should be used for soups only
