Anyone know a good CPU monitor?

clockgen for over clocking.

Checking out your MB's manufacturing site will be a good place to start for a monitor.

Well I have MSI's CoreCenter, but I get a bunch of errors, such as "Your motherboard does not support detection!"

CoreCenter sucks. It consistently gives me temps 4C higher than MBM. It's voltage readings don't match those in BIOS either. I use Mother Board Monitor 5 for CPU temp monitoring currently.

Downloaded it, I guess you can only monitor things and can't change anything (such as voltages, clock speeds, etc.)? Still, it's a very thorough program though.

Get clockgen to over clock via windows. http://www.cpuid.com/clockgen.php

Be warned though not to set it too high. Just because windows runs stable does not mean you won't fry your video card during a 3D game. Trust me, I did it to my ATI 9800 6 months ago.
