We had a going away lunch at Olive Garden today, and the subject of how Olive Garden prepare their foods came up. A very reliable source once told me that most of their entrees are made at one central location and they just ship the foods in pre-portioned frozen porch, they will just reheat the food with a mircowave and serve at your local Olive Garden. Is it true or just a myth? None of my coworkers would believe me. I thought this was a well known fact?

I'd like to know. I've never really trusted chain restaurants all that much, so I wouldn't be surprised.
A friend's wife used to work there. I can't contact him immediately, but if an answer isn't provided in time, I will try to post back what I find. I suspect their food is cooked completely on site though. I have too many variations in my favorite dish that would seem to coincide with different cooks on duty when I go there.
I would be shocked if that was the case. The logistics of transport would probably be more expensive than paying cooks on-site, since you hvae to pay the cooks anyways at a 'central location.' And some dishes can't be reheated either.
They probably do usual restaurant stuff like cook their noodles, their chicken etc. ahead of a shift. When they serve you pasta, they dump the noddles into boiling water for a few seconds, and boom - you have adante noodles. But most restaurants do that to ease the impact of crunch times.

i used to work at an Olive Garden, i bussed tables, paid pretty good money and didn;t work much hehe

Yeah. Any busy restaurant does that noodle thing. Getting slammed sucks, especially when it's only one station getting slammed. Easing that was much as possible is one of the key parts of restaurant success.

Mary's kicks ass....excellent food and the staff is usually nice to look at as well. Camerelli's is good to, but I've had a couple of experiences there with lousy service. Haven't been to Pomodoro's.....gonna have to try it.Originally posted by: Descartes
