I've made a lot of use of NTFS junctions (sysinternals tool) over the years, and have had very few incidents of software not liking their use, but today was the first day I tried symlinking (mklink on Win10) based on advice for relocating an Outlook OST file without recreating the whole profile, which seemingly has worked fine. However I'm wondering if I need to be aware of any potential pitballs (e.g. if Windows decides it doesn't like the symlink).
