I like the mole chicken alot at one of my local mexican restaurants. No recipes though. :(

Anytime I've seen mole (pronouced mohl-ay) eaten in my family, it's been as a side dish to dip food in. My wife's grandpa used to dip turkey in it at thanksgiving.

The mole I ate in Cuernevaca was pretty strange. It was this very thick, black stew that had chicken meat & veggies throughout it. It was served at large get togethers as the main course, along with lots of corn torillas (always with the tortillas in mexico). I've had mole sauces in the states, but I doubt the stew kind will come across the border.

I've seen in cook books that there are all kinds of different mole sauses, like green and red varieties that don't have chocolate. I took mole to be a sauce/stew that had spread to many different regions, all with their own varieties.

There's a place near here called "Holè Molè". Tried their Chicken Mole Burrito, but really didn't care for it much.

Mmm, mole. That's exactly what I had for lunch: green mole made with pumpkin seeds and served with chicken. My favorite mole though is the kind made with unsweetened chocolate and the best of that type we get from a friend when she comes to visit from Vera Cruz. Living in Mexico does have its advantages occasionally. :D

Sorry, no recipes though.

From this restaurant, I preferred their Mole Verde, Poblano, and Negro dishes.
There's a restaurant here called La Parrilla that holds a mole festival every year. About 50 different kinds of mole. It's awesome.
