Anyone have a good turkey recipe?

I'm looking for a new turkey recipe. I have heard of people separating the skin from the bird and stuffing that with butter, seasonings etc.. I was wondering if anyone has tried that? It sounds mm.mm good. We usually soak a cheese cloth in butter and lay it on top of the bird. It holds the moisture better when basting the turkey.


If anyone has an amazing turkey recipe (If it is grandma's secret recipe pm it to me) please enlighten me!!

Sorry, no recipe here... I'd just like to say...

I've had roasted, fried, bbq'd, baked, and probably just about any other type of cooked turkey, and I've never had a good one.

I've even been to a couple of those restaurants that specialize in turkey, and it wasn't good there either.

It's always drier than a cotton ball in the dessert.

So I too am interested in good recipes. 🙂
 
Put in oven with stuffing (two sticks of butter required with stuffing), put butter under skin, cover liberally with salt/pepper/herbs. Put on rack with onions/garlic or other root veggies. stick in oven.

And don't open that dang oven. It doesn't get much better than that.
 
I tell you guys, you can do all that, but, the one thing that has worked for me, that past few years, is this. Let the bird cook slowly. What I mean by that is this. Start the bird out in the oven at 350 degrees, for about two hours, until you SMELL THE BIRD. Once you start to smell the bird, turn the oven back to about 275, and sometimes 250 if I am busy for awhile. I let it cook slow all day long. I will not do it any other way.

Adjust your cooking times depending on when you eat. I never have to baste it, though I choose to do it anyway. The bird will fall apart on you, yes it will. It is some damn fine eating. You have to cut the bird up anyway. I have done it this way for the past 5 years, it works every time. The bird melts in your mouth, its wonderful.

PS. I do add some some chicken stock and a bit of butter when I put the bird in, with rosemary, all that good stuff. I don't add the stuffing to the bird, I do that separate. 🙂

I've made Alton Brown's turkey for 3 straight years now.

My dad would not eat turkey (since he always found it dry) until he tried this one.

It's AMAAAAAAAAAAAAZING!

I was actually just going to suggest the Good Eats method - I just saw the show the other day where he did the stuffing in a unique way. I don't know where that recipe is, but there's also a video of the 500-degree method here:

Thirding the Good Eats Turkey. My Mom has been making it since I showed her the recipe a couple years ago and it's very, very good. Never dry either.

This year I guess she's doing two turkeys - one roasted and one smoked. I can't wait to go home for Thanksgiving 😀
