anyone have a good slow-cooker pot roast recipe?

methinks I'll make a pot roast in my slow cooker next week.

Anyone have any good recipes? There are too many to sift through online.

Not something too conservative; something a bit more interesting.

Sure.

+ Buy alternator sized chunk of meat.
+ Throw alternator sized chunk of meat in crock pot.
+ Add some copious amount of water to alternator embedded in crock pot.
+ Add desired seasonings to copious alternator embedded in crock pot.
+ Turn on crock pot with embedded seasoned copious alternator.
+ Wait until copious seasoned crock of alternatory goodness is done.
+ Go buy a McRib and rub it on your nipple a'la dNor.

bad idea. last time i did that I had 40 supermodels chase me down madison avenue trying to rip my clothes apart.

I'm trying to be a *little* more subtle this time around.

Poke holes in the meat with a knife and stuff it with garlic, maybe some basil or even rosemary if you like those flavors. This really helps flavor the meat. Include more garlic and some aromatics to the broth (Use beef broth or some bullion to really intensify the flavor of the meat - I'm not a big fan of this, but my fiancee loves it). Chopped potatoes, carrots, onions, and fresh green beans... and some more garlic. Put the lid on and let i do its thing. When you can easily "cut" the meat with the big plastic spoon it is ready to serve.

Oh, fresh ground pepper and some salt (Don't use salt if you are using beef broth/boulion) to taste as well :)

2-3 pound bottom round roast or equivalent cut
Cube up taters, slice carrots and a stick of celery
1 Can cream of mushroom soup
1 envelope onion soup mix
1 cup red wine
1 cup beef broth
A few slices of bacon

In a frying pan brown the roast on all sides over high heat. Toss the seared roast, the veggies and everything else into the crock pot on medium for 6 or 7 hours. Salt and pepper to taste, if desired thicken the gravy with a little corn starch before serving.

Optionally you can leave the potatoes out of the pot, cook them separately, mash them and serve on the side with the gravy over them.

perhaps you can try creating an Asian inspired recipe.

using ginger, garlic, onions, tariyaki sauce, etc...

or maybe a Tex Mex version.

or just the more traditional pot roast.

I found a really nice looking recipe:

Ingredients

* 3-4 lbs chuck arm pot roast
* 1 teaspoon vegetable oil
* 1 1/2 teaspoons salt
* 1/8 teaspoon pepper
* 1/2 teaspoon ground ginger
* 3 whole cloves
* 4 medium apples, cored and quartered (leave skin on)
* 1 small onion, sliced
* 1/2 cup apple juice
* 3-4 tablespoons flour
* 3-4 tablespoons water

Directions

1. Wipe roast well and trim off all excess fat.

2. Lightly rub top of meat with oil.

3. Dust meat with salt, pepper and ginger.

4. Insert cloves in meat.

5. Place apples and onions in the bottom of the Crock Pot and put the roast on top of the apples and onions.

6. Pour in the apple juice.

7. Cover and cook on a low setting for 8 to 12 hours.

8. Remove the roast and apples to a warm platter when fully cooked.

9. Turn the Crock Pot to High setting.

10. Make a smooth paste with the flour and water and stir the paste into the Crock Pot.

11. Cover and cook until thickened.

12. Pour gravy over roast when serving.
