Anyone have a good salsa recipe?

I have, as of late, perfected my tortilla-chip making routine (making home made tortillas, then cutting them into wedges and deep frying for 1 minute)... but I don't have good salsa to go with it. I find most store-bought salsa tastes flavorless, or horrendous, or worse.

Anyone have a really good salsa recipe-- one that you actually use and love? One that makes you not even consider going to your favorite Mexican restaurant for their salsa?

Most websites I've found that have salsa recipes have reviews like "This salsa is great-- better than almost anything you can buy at a store!". WTF? All store-bought salsa is horrible! Or a review like "This salsa is great! My kids love it mixed in with their Mac and Cheese, and sometimes I use it my liver meatloaf!". Or a review like "This salsa tasted pretty good even after it's been canned and stored in my basement for two years!" (if you think canned salsa can still taste good after two years than I have to question your taste right off the bat).

It really depends on what you like, chunky, spicy, mild, smooth, etc.

My perfect salsa recipe:
cut up tomatoes
cut up yellow onion (1/3 as much as tomatoes)
2 cloves garlic, minced
some lime juice
some vinegar
a sh*tload of cilantro


It's always better the next day, BTW.

Here is mine

dice about 5 medium Tomatoes (I like Roma)
dice one medium White Onion
about 1/4 cup fresh Cilantro chopped.
dice 1 to 2 Fresh jalapeño's seeded (More if you like it HOT)
about one lime
optional a pinch of garlic powder
salt to taste

This is really pico de gallo, but if you put it in the blender its a great hot sauce worthy of any restaurant.

That looks good, but I bet red onions would be better, plus how hot is that? It looks to be on the mild side.

Mine is like this, except with a minced clove of fresh garlic.

That looks good, but I bet red onions would be better, plus how hot is that? It looks to be on the mild side.

So grab some peppers and throw them in :p
