Anyone have a good gumbo recipe?

I decided that today I want to make gumbo, but I don't have a recipe so I'm turning to ATOT to provide one.

All I ask is that it contain no seafood. Thanks.

Grab can of Chunky Chicken Gumbo soup, pull off top, pour into bowl, microwave

It's surprisingly spicy for mass-market soup.

Check out Alton Brown's recipe on the Food Network website. He recommends cooking the roux in the oven to avoid burning it.

It does work out wonderfully. That's how I'm going to do it for now on.
