I steam lobsters. I don't boil it. I like lobsters, but I prefer king crabs. I look at lobsters as cheap king crab substitute. When king crab legs prices skyrocketed couple years ago and the quality of the legs were small and crap, I ate lot of lobsters. Now king crab legs prices are back down and the quality is decent again, I'm back to eating king crab legs. If I buy lobsters, I buy it in 10 or 20 batches. After about 5lb of lobsters, you get sick of lobsters and everything just taste rubbery. But it's the same with king crab.

Thanks. After looking at yours, now you have me hungry for some oysters. I might have to go to Pappadeaux to eat some oysters.

I steam the lobster in a bottle or two of beer like landshark. Then dip the meat in lime juice/salt/pepper or herb garlic butter. As long as the lobster isn't overcooked, it doesn't need much prefinishing seasoning. Streaming is much easier and faster than boiling.

I'm purchasing some lobsters from BeeBoop this week and they should arrive on Wednesday the 26th if anyone is interested in seeing them and how they look. I live in Kansas, so they have quite a journey.
