I've been working on perfecting my pizza... ditched my Kitchen Aid, and had to get something better to help make dough. This new Electrolux DLX 2000 seems to do a much better job at the dough than the KA, but then I've only used it twice so far.

Anyone else make their own pies?

What do you use for sauce, and cheese?

I've been using these highly recommened 6in1 tomatoes, and Grande cheese...

yeah, something like that... except make in flour form instead of RAW wheat... but close

When I started college, I grew up in Miami, Florida, I went to college in Ohio. My roommate freshman year was from New Jersey. I'd never met the guy. First night in the dorm -- this is the absolute truth -- he goes, "Hey, you wanna go halves on a pie?" And he meant pizza, but I'd never ever heard that put like that. I thought that he wanted to get a pie. And I'm like, "I don't know, you want to get a pie?" "Yeah, yeah, I figured we'd go halves on a pie to celebrate. Get a pie." "Well, hey, I hadn't really thought about that. I hadn't really thought about getting a pie. What are you, Little Jack Horner?" So I wanted to be open minded, it was my first day in college. "Okay, let's go halves on a pie." So we got half pepperoni and half blueberry.

My wife has found a good dough recipe after trying a bunch of them. She uses the kitchen aid mixer to mix it. We usually buy fresh moz and use a jar sauce. We'll have to try some homemade sauce.

What's her recipe? I've been trying to find a dough recipe that i like, and so far nothing reall stands out.

Also, anybody have experience using the dough setting on a breadmaker to mix the dough? How does that work out?

I've been using these highly recommened 6in1 tomatoes, and Grande cheese...

all the time....I use my bread machine, dough cycle....

I went by the recipe from a pizza book the first few times...now I just throw in 3 or 4 cups of bread flour, some olive oil, pinch of salt, a little sugar, a cup or so of water, and the yeast...I watch it for the first few minutes to see if it needs water, etc.

yes, i make my own dough (by hand, pussy) and my own tomato sauce too

homemade rules. deep...thin crust...herb crust, wahtever, its awesome.

i make my own

i use a semolina dough recipie, my own fresh tomatoes and herbs from my garden, and fresh ground cheese from the store

yeah, i use a bit of semolina, or Durum in my pizza too... good for the springy texture of the dough... :)

I sprinkle corn meal on the pan before placing the dough, it makes a nice crisp crust. I also place the first layer of moz, sliced in thin sheets, not shredded, directly on the crust. It keeps the sauce and moisture from the toppings from soaking into the crust so the crust bakes better. Then I layer on sauce, pepperoni, sausage, onions, parm, mushrooms, peppers (sometimes), then another layer of moz and another layer of the sauce and toppings and top with another layer of moz. I use a 20" pan and use about five pounds of ingredients. I pre-fry the pepperoni and sausage. I use jar sauce. I tried making my own sauce a few times but it never came out any good, too acidic.

I have milled my own flour a couple times (Champion juicer attachment) but it didn't seem worth the bother.

Do you use a pizza stone? That will make a nice crisp crust... Can't do this without a pizza stone...
prefry the pepperoni too? I don't even cook the sauce, it cooks on the pizza when its cooking...

I've been layering the moz at the bottom, veggies... mush, pepper... and such in the middle... a layer of provolone, and then the sauce on top...

I really like the sauce on top...

For my sauce i've been using these 6in1 tomatoes from escalon.... keep in mind that the type of tomato makes all the difference.. and adding a few things like oregino, and basil, garlic and the like

Meat on top of the pie for the extra cooking...

I make pizzas everyday from scratch. Today I made about 80 of them.

Yeah, I make my own pizzas all the time. Good stuff. So much cheaper and better than frozen pizza. Not quite as good as what I'd get from a pizza place... but not everyone has the good fortune of living in NJ.

Where's that pie quote from?

i used to do it al the time when i lived in England. As for sauce...i hated when it was not the right consistency and would separate, so i started with tomato paste and just added a little water and garlic/herbs until i got the right consistency. i also would add a tiny bit of extra oil to the dough and only Extra Virgin Olive oil ....

I really should start doing that again... making pizza.

Actually I've been reading that extra-virgin Olive oil breaks down at higher temps. Just regular olive oil works great for pizza at higher temps

Jebus, that mixer makes a lot of dough. I just make mine in a breadmachine (2 pound loaf). Makes enough for 3 14" or 2 16" pizzas, plus maybe a few breadsticks. I like my pizza paper-thin.

mmmmm yes you should!! especially since there's nothing worse than jersey pizza.
