anyone buy an intel NUC?

No, I haven't, because it's way, way, way too minimalistic, for the cost (if it's going to lack PCIe, it better have more video and USB ports, and a mini-PCIe slot woudn't be bad, either). However, the rest of your questions can easily be answered by reading the product specs and reviews.
 
No, the pre-built ones don't interest me and when I priced up components to build one myself the cost was way too high.
