I have a good friend who does that at a local university's business school. For him it's a lot of work because he tries very hard to do a great job. He arranges for people from other companies to come in and do case studies, he assigns difficult projects and helps the students with them, he gives them his cell phone number so they can reach him with questions and he makes up new tests each semester. On the other hand he has some colleagues who do just about nothing except show up for class. You'll have to decide for yourself how much effort you are willing to put into it. He probably works two hours outside of class for each hour of actual class.
With evening classes taught by adjuncts, there are rarely any office hours which are convenient for the students since most of them work full-time. Think about how you will be able to help students who need some extra attention.
One thing he doesn't like was not having a choice of textbook. You might be able to choose your own, though.
I think he makes about $50/class hour.
