inspired by fxcuisine.com (btw, THE greatest cooking website EVER), im looking into buying a pasta maker.

yes i know i can just flatten the dough and cut out some shapes by hand, but i want the ability to extrude out all kinds of shapes of pasta, which can only be done by machine

question is - how long can this thing keep? i eat for 1, so i dont want to make a tiny batch everytime i need pasta. can i dry up the pasta and keep it just like store-bought?

I'd blanch and freeze the fresh pasta for easy thawing & cooking.

yeah I've made it at home.

I make large batches and freeze most of it for later use. I've used it up to a month later without ever noticing any deterioration of quality. it never seems to last very long though- I mean, I tend to eat it all up very quickly :)
