So I was hanging out with 2 friends of mine, and I jokingly said that I would wine and dine them.....and they just happen to agree. So now I am stuck with no recipie...although I can actually cook. The only catch is one of them is a vegeterian, so preferably vegeterian...or it can have poultry in it. no red meat though. Lets see what you got!

EIDT - Its for dinner!

Vegweb.com has a lot of vegetarian recipes. I've had good luck with most of the stuff I've tried off there.

How about fish? I'd do king salmon, but only if it's fresh. I'd do it very simply, just to emphasize the flavor of the fish.
Do a salad with "microgreens" and candied almonds and poached pear.
And for dessert...who did you say is comming?... A nice dessert wine, perhaps port with a chocolate dessert.

That should score...I'd eat salmon every day if I could afford it and it is hard to screw up baking/broiling it.

White Stag Chicken Chili.

Under no circumstance should you reveal a talent for cooking, ever. This is a trap. Plenty of wine will cover all sins. Do not show off or you will be held to this standard forever more.

If you insist on trying something fancy, go get an Indian cookbook, the old Time-Life books are really good. Indian food is easy, light, and looks good. Learn to cook saffron rice properly and you could serve it with White Stag and still come out looking good.

One that's worked for me lately, on both my girlfriend and my parents, is chicken with a pipian sauce (green 'n' spicy with pumpkin seeds). It goes well with any sort of rice and vegetable side. I can post the recipe if you're interested.
