Anybody have a good enchilada recipe?

Lately I've been trying to come up with a good beef enchilada recipe but haven't had much luck. The sauce is the hard part. Seems most recipes use tomato sauce as the base ingredient which is okay but I always thought the brown chili sauces used by restaurant chains like Don Pablos and Rio Bravo (before they went belly-up) were better. So far I've been unable to mimic this brown chili sauce.

So...anybody have a good enchilada recipe (even if it uses tomato sauce)? Please share it!

We make a lot of fusion dishes in our house, and variations of the enchilada is one of them. We actually make a sauce out of yogurt, lime, cucumber and cilantro. It's pretty close to an India raita, and it's good on some enchiladas. It's healthier than sour cream and more flavorful than tomato-based sauces (imo). You could also stick with a basic tomatillo-based sauce (better than regular tomatoes, imo) or even try to make your own mole.

In short, I would just experiment and avoid the standard sauces that you'll find. We find that the lighter sauces are the most flavorful. One recommendation though: Make your own corn tortillas. If you can't do that, find a local Mexican store that sells them fresh or has the dough. It's not that difficult to make, and the difference can be outstanding.

Tomato Sauce, wtf?? That isnt an enchilada sauce. It should be primarily flour, powdered chili peppers, salt, and maybe a few other spices. Mix with water and that should be it.Buy this. Its good. Try this link and order a package of the El Monterrey Enchilada Sauce. We have been making these for years.
