What are the best Chinese woks usually made out of? I want a nice authentic restaurant-quality wok, and I don't know where to start...

I want Chen Kenichi's wok actually...damn, homeboy has skill....

they have special teflon chans but the thing about the wok is that is is used in high heat situations and teflon does not handle that too well.

"chan" isn't a word that means a wok spatula, it's just general chinese word that can mean shovel or spatula.
I saw a infomercial that was selling a wok and kept referring to the "chan" as if it was some magical chinese secret weapon in cooking. It's just a spatula!!!! it's not a "chan"!!!

I've always known it as a chan. Shovel or that spatula. Theres other words in chinese that have two meanings for one word. Tong = soup or kill you.

But anyways iron or nothing for me. Make sure to season it first using the usual ways of seasoning new iron cookware. I like the one with the longer handle on it like a traditional pan, just because I'm a wuss and don't wanna get near the hot wok.
