Any way to "reset" all security/sharing settings for hard drive and Folders?

I have never been so annoyed with a computer issue. I have a file server set up for my home network. It is actually part of my neighborhood network that I have set up for the surrounding houses.. Here are the problems:

*I share a file and only select files within are actually shared. Less then a quarter of all the files in the Dir.
*Files switch from shared to not shared as they please..
*Sharing an entire drive doesn't work. Nothing is allowed to be accessed at all. You can see the first files and the other directories.. You can go into the directories but only other empty directories exist..

I think allot of this may have been caused from the drives I made the server up from. They all had files already on and some shared and some not. Some had special permissions and some didn't.. Anyway, I just want them all reset to Not Shared, then I will take it from there..

 
Well, you can't share files, only folders (you can exclude files from being accessable within the share via security permissions, of course).

You can delete all shares by deleting this key:

HKEY_LOCAL_MACHINE\SYSTEM\CurrentControlSet\Services\lanmanserver\Shares

And restarting the Server service, or simply go into Computer Management and unshare everything from there.
