Any way to just make it hibernate on command and not having to set it to do so after a certian period on the screen saver panel?

Sure would be nice..

Windows help says :

Open Power Options in Control Panel.
Click the Hibernate tab, and then select the Enable hibernate support check box.
If the Hibernate tab is not available, your computer does not support this feature.

Click OK to close the Power Options dialog box.
Click Start, and then click Shut Down. In the What do you want the computer to do drop-down list, click Hibernate.

but there is no Shut Down, just "turn off computer" in the start menu and from that only stand by, restart, turn off..

I know my computer supports it because it works automatically if I do the screen saver auto hibernate option...

If you disable the Welcome Screen the extra option will be available I bet. Microsoft probably didn't feel like making a different version of that silly colorful box for the shutdown options. Notice that logging off is also not an option.
