Any way to disable the thermal sensor of a fan?

cut the sensor off and twist the bare wires from either end of the sensor together.

Don't you mean keep the wire apart after cutting them? It works for my Enermax.

Do you mean in the PSU? If yes, there is usually a little fan control circuit board in there. Just cut the fan lead (usually red) from the control board and splice it directly to any 12V lead - perhaps on the 12V input side of the controller board.

Considering the answers so far, how about random jabs with a sharp object in the general area of the sensor?

just find the thermistor and solder a small piece of wire across it, or maybe, if its little enough a drop of solder may shunt it too. I would prefer these methods since yuo can undo them if you want.
