Sure, and this is healthy:

Lightly oil the fish on both sides - I use olive oil
Dust with cajun seasoning
Spray the bottom of a large-ish pot with non-stick oil
Cook one side of the fish on medium-high for about 3 minutes
Reduce heat to medium-low and flip the fish
Add alot of fresh spinach (essentially fill the pot up)
Add one can of Rotel, drained
Cover and cook until spinach is reduced/wilted and fish is cooked through, about 5-7 minutes.
Stir the spinach at least once to distrbute the heat.

Enjoy the spicy, healthy goodness.

I usually eat this over some brown rice.

(edited for order - pour the rotel over the spinach)

We just brush it with olive oil dust with season salt and bake on solid pan.
When almost done , dust with parmigiana and top with cheddar cheese.
About 10 minutes on 350 no turning and your ready to eat.
It's great with some really buttery corn , a side dish of rice and cold glass of milk.

sop it around in a mix of olive oil and soy sauce. bake, salt, pepper then pan fry a bit to get a little crust. throw on a lemon during baking if you like. serve on rice.

I usually grill mine.
I sprinkle salt, pepper, and lime juice on it and grill in the GF (George Foreman grill) for a few minutes.
Then, I stuff it in a tortilla, add cabbage, salsa, and onion and eat it up. :)

Try this:

Cover a flat baking sheet with a coat of olive oil. Let it heat in a 400F oven for a few minutes. While waiting for the pan to heat, chop up a couple of pieces of bacon (fine). Put the fish on the pan, and add the bacon on top. Season with some thyme, oregeno, a little chili powder, chives, and paprika.

Bake until the bacon is done (the fish should be flakey).

Serve with some steamed veggies and a baked potato, and you have a dinner!

I rub some cajun seasoning onto both sides of the fillet. I then make little aluminum foil "boats" and place one fillet in each boat. I pour a couple of table spoons of olive oil on each and then place the boats on a grill at medium heat. Cook for maybe 7-9 minutes (check by pulling a fork across the top of one...the fish should be soft and "flaky". Pull fish off grill, drain any remaining oil, and place fish on plates. Then serve these with soft taco shells, guacamole, homemade salsa, fresh spinach, and caramelized almonds for fantastic fish tacos.

tablespoon, teaspoon, whatever, of pesto.
when it's done frying, cut it in half and sandwich a piece
of cheese between the hot sides.

Using the term EVOO puts you on my ban list.

Lol I was thinking the same thing.

Anywhom,

Get 2 sheets of parchment paper. (lightly brush them w/oil
Put your fish in there and roll the sides up around it a little bit
Put a lil OJ in there or whatever you feel like really
Throw some veggies like brocolli and carrots and celery in there
Season it how you like
Put the other parchment paper on top and roll the sides shut to seal it
Bake it in the oven

Not the most clear recipe I'm sure, but if you google fish in parchment paper or something of that nature I'm sure you can find a good recipe like that.

Really? I thought that was the catfish's job. I do not eat catfish and tilapia may be heading in that direction too!
