Any recommendations for good software to convert mp3's into the audio format that I can play in my car stereo?

You need to convert your MP3's into wav format. Winamp is able to do this under Options/Preferences/NullsoftDiskWriter.

Current CD burning software, such as Easy CD Creator 4.0, will burn MP3's and convert them on-the-fly to audio CD format while burning. Just be sure to select the option of making an Audio CD!
