I'd like to keep my truck just for bad weather and hauling and get something with better gas milage, but don't want to get reamed by the insurance. Any one do this and how did you work it out?

Tell your insurance that the vehicle is "limited use". Typically that's less than 7,000 miles/year, but check with them. That will get you a discount on the rates, but may require that you document your odometer reading every 6 months or so to validate that you are not driving more than their limit.

I had 4, all registered and insured. One broke, sold it for parts. Now I'm back down to 3 - one of which is currently for sale. However, I'll probably buy another this week or next - putting me back up to 4. If I get the new car, then my red car will be put up for sale, alongside the white one.

My ultimate goal is to have two.

Roughly, what percentage discount are you getting with the 'limited use'.
I believe it's about a 40% discount beyond the normal "multi-car" discount. I'd have to check.

It's a discount, for sure. I put about 25-30K a year on my scion, but my local agent classifies me as driving 7500/miles or less/year. (They do know!)

Always did that up till recently. Don't need full coverage on the beater, and it could be considered a primary vehicle anyway. We don't drive any of our vehicles over 5K per year as it is, but I believe you get some kind of multi car discount.

The wear & tear it saves on your other cars is well worth keeping it. Besides, how much can you sell it for anyway? I've always concluded it it's worth more to me as a beater, than a measly few hundred bucks. If your vehicles are compatible, you can use older parts on the beater. Say it needs a battery. Buy a new battery for one of your good machines, and put its old battery in the beater. That works for tires as well.
